Instructions

  1. Sauté Onion: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes until translucent and soft.

  3. Cook Carrots and Bell Pepper: Add chopped carrots and diced red bell pepper. Cook for 5 minutes until they start to soften.
  4. Toast Spices with Cauliflower: Add cauliflower florets, turmeric powder, and black pepper. Stir and cook 1-2 minutes to lightly toast spices.
  5. Simmer Vegetables: Pour in vegetable broth and bring to a boil. Reduce to a simmer, cover, and cook 15-20 minutes until vegetables are tender.
  6. Add Coconut Milk and Spinach: Stir in coconut milk and fresh spinach. Cook for 3-5 minutes until spinach wilts.
