Description

This Beef Cheddar Egg & Guac Power Bowl is a nutrient-packed meal combining marinated, seared beef with creamy guacamole, fresh greens, cheddar cheese, and a sunny-side-up egg. Perfect for a quick yet satisfying lunch or dinner, this bowl balances rich flavors and protein with healthy fats and vibrant veggies for a wholesome, delicious dish.

Ingredients

Scale

Beef Marinade

  • 1/2 lb beef sirloin or ribeye, thinly sliced
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar

Guacamole

  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 small clove garlic, minced
  • Salt to taste
  • 1 tablespoon chopped cilantro (optional)

Other Ingredients

  • 1 egg
  • 1/4 cup cheddar cheese, cubed or shredded
  • 1 cup fresh spinach or mixed greens
  • 1/2 teaspoon black sesame seeds
  • 1 teaspoon oil for frying

Instructions

  1. Marinate the Beef: In a bowl, combine the thinly sliced beef with soy sauce, minced garlic, sesame oil, and brown sugar. Mix well and let the beef marinate for 30 minutes to absorb the flavors.
  2. Cook the Beef: Heat a skillet over medium-high heat and add a small amount of oil if necessary. Sear the marinated beef in batches until browned and cooked through, about 2-3 minutes per side. Set the cooked beef aside on a plate.
  3. Make the Guacamole: In a separate bowl, mash the ripe avocado with the lime juice, minced garlic, salt to taste, and optionally, chopped cilantro. Mix until you reach a creamy but chunky consistency. Set aside.
  4. Fry the Egg: Heat 1 teaspoon of oil in a small pan over medium heat. Crack the egg into the pan and cook sunny-side-up until the white is set but the yolk remains runny. Sprinkle black sesame seeds over the egg for garnish.
  5. Assemble the Bowl: Lay fresh spinach or mixed greens at the base of your bowl. Add the cooked beef on top, then a scoop of guacamole, followed by cheddar cheese cubes or shreds. Finally, place the sunny-side-up egg on top.
  6. Serve: Serve immediately. For extra flavor and heat, optionally drizzle some hot sauce or sriracha over the bowl before eating.

Notes

  • You can substitute ribeye with sirloin or another tender beef cut.
  • Letting the beef marinate longer enhances the flavor but 30 minutes is sufficient for a quick meal.
  • Use fresh lime juice for the best guacamole flavor.
  • For a dairy-free option, omit cheddar cheese.
  • Serve with steamed rice or quinoa to make a more filling meal if desired.
