Description

This Beefy Melt Burrito recipe features a savory ground beef filling seasoned with taco spices, combined with refried beans and melted cheddar and Monterey Jack cheeses, all wrapped in warm flour tortillas and baked to perfection. Topped with sour cream and salsa, it’s a hearty and comforting meal perfect for a busy weeknight dinner.

Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Cheese and Beans

  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Assembly

  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-5 minutes.
  2. Cook Ground Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until the beef is browned and fully cooked, about 8-10 minutes. Drain any excess grease if necessary.
  3. Add Seasoning: Stir in the taco seasoning and mix well. If desired, add salt and pepper to taste. Cook for an additional 2 minutes to allow the flavors to meld.
  4. Prepare Cheese and Bean Mixture: In a separate bowl, mix the refried beans with half of the cheddar and Monterey Jack cheeses to help bind the filling together.
  5. Assemble Burritos – Step 1: Lay out each flour tortilla on a clean surface and spread a generous amount of the refried bean mixture onto the center of each tortilla.
  6. Assemble Burritos – Step 2: Add a portion of the seasoned ground beef on top of the beans, ensuring each burrito is filled evenly.
  7. Add Remaining Cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses over the beef in each tortilla for a melty finish when baked.
  8. Roll Burritos: Carefully fold in the sides of the tortilla and then roll it up from the bottom, securing the filling inside. Repeat for all burritos.
  9. Preheat Oven: Preheat your oven to 375°F (190°C).
  10. Bake with Foil: Place the rolled burritos seam side down in a baking dish. Cover with aluminum foil and bake for about 15 minutes.
  11. Bake without Foil: Remove the foil and continue baking for an additional 10 minutes until the tops are golden and bubbly.
  12. Serve: Remove from oven, allow to cool for a few minutes, and serve with sour cream and salsa on the side. Garnish with fresh cilantro if desired.

Notes

  • Drain excess grease from beef to reduce fat content.
  • Use whole wheat tortillas for a healthier twist.
  • Customize the cheese blend according to preference.
  • Serve with additional toppings such as guacamole or jalapeños.
  • Can be made ahead and reheated in the oven for convenience.
