Blackberry Jam

Instructions

  1. Prepare the blackberry jam: In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat, stirring occasionally, until the mixture thickens into a jam-like consistency. Remove from heat and allow to cool completely.
  2. Prepare the puff pastry: Thaw the puff pastry sheets according to package instructions, then roll them out on a lightly floured surface into a rectangle shape.
  3. Assemble the twists: Evenly spread the goat cheese over the rolled-out puff pastry. Spoon and spread the cooled blackberry jam evenly on top of the goat cheese layer.
  4. Shape the twists: Cut the pastry into strips. Fold each strip in half lengthwise, then twist gently to create a spiral shape. Place the twists on a baking sheet lined with parchment paper.
  5. Finish and bake: Beat the egg to make an egg wash and brush it over each pastry twist. Mix the lemon zest, minced thyme, and raw sugar to create a lemon-thyme sugar, then sprinkle this mixture on top of the egg wash.
