Blackberry Jam
- 2 cups blackberries

- 2 teaspoons fresh thyme, minced
- 1 egg
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the blackberry jam: In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat, stirring occasionally, until the mixture thickens into a jam-like consistency. Remove from heat and allow to cool completely.
- Prepare the puff pastry: Thaw the puff pastry sheets according to package instructions, then roll them out on a lightly floured surface into a rectangle shape.
- Assemble the twists: Evenly spread the goat cheese over the rolled-out puff pastry. Spoon and spread the cooled blackberry jam evenly on top of the goat cheese layer.
- Shape the twists: Cut the pastry into strips. Fold each strip in half lengthwise, then twist gently to create a spiral shape. Place the twists on a baking sheet lined with parchment paper.
- Finish and bake: Beat the egg to make an egg wash and brush it over each pastry twist. Mix the lemon zest, minced thyme, and raw sugar to create a lemon-thyme sugar, then sprinkle this mixture on top of the egg wash. Bake in a preheated oven at 400°F (204°C) for 16-18 minutes, or until the twists are puffed and golden brown.
- Serve: Allow the twists to cool slightly on a wire rack. Serve warm or at room temperature, garnished with finely chopped fresh parsley.
