Description

Delicious Blueberry Cream Cheese Egg Rolls are a crispy, golden dessert treat featuring a creamy, sweetened cream cheese filling studded with fresh blueberries. Perfectly fried until crunchy and finished with a dusting of powdered sugar, these egg rolls make an irresistible appetizer or snack that combines creamy, fruity, and crunchy textures in every bite.

Ingredients

Scale

Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 cup fresh or frozen blueberries

Egg Rolls

  • 8 egg roll wrappers
  • 1 egg (beaten, for sealing the wrappers)
  • Oil for frying (vegetable or canola oil, enough for 1–2 inches in pan)
  • Optional: powdered sugar for dusting

Instructions

  1. Prepare the cream cheese filling: In a medium bowl, mix softened cream cheese, granulated sugar, vanilla extract, and lemon juice together until smooth and well combined.
  2. Add blueberries: Gently fold fresh or frozen blueberries into the cream cheese mixture, being careful not to mash them, ensuring the fruit remains intact.
  3. Position the egg roll wrapper: Lay one egg roll wrapper flat on a clean surface with a corner pointing toward you to form a diamond shape.
  4. Add filling: Spoon about 2 tablespoons of the cream cheese and blueberry mixture into the center of the wrapper.
  5. Fold and roll: Fold the bottom corner over the filling, then fold in the sides snugly, and roll the wrapper tightly towards the top corner. Brush the beaten egg on the final corner to seal the egg roll securely.
  6. Heat oil: In a pan, heat 1 to 2 inches of vegetable or canola oil over medium heat until it reaches 350°F (175°C), ideal for frying.
  7. Fry egg rolls: Fry the egg rolls in batches, cooking each side for 2 to 3 minutes or until they are golden brown and crispy on all sides.
  8. Drain excess oil: Remove the egg rolls from oil and place them on paper towels to drain any excess oil.
  9. Serve: Optionally dust the warm egg rolls with powdered sugar before serving to add extra sweetness and a decorative touch.

Notes

  • Use fresh or frozen blueberries depending on availability; if using frozen, do not thaw fully to avoid releasing too much juice.
  • Be careful when folding the egg rolls to avoid tearing the wrappers for best, crispy results.
  • Maintain oil temperature around 350°F to ensure even cooking and prevent greasy egg rolls.
  • Serve immediately after frying for maximum crispness and best flavor.
  • Powdered sugar is optional but adds a nice touch of sweetness and visual appeal.
