Instructions

  1. Preheat and prepare dough: Heat the oven to 425°F and place an oven rack in the lower position. Unroll the refrigerated thin crust pizza dough onto an ungreased large cookie sheet lined with oven-safe parchment paper. Brush the dough with olive oil. Bake the dough for 7 minutes until slightly set and partially cooked. Remove from the oven.
  2. Caramelize onions and sauté mushrooms: While the dough bakes, melt butter in a 10-inch nonstick skillet over medium heat. Add the thinly sliced onions and salt, cooking for 3 to 5 minutes until the onions soften and begin to caramelize, stirring occasionally. Add the sliced mushrooms and cook for an additional 5 to 7 minutes until the mushrooms soften and start to brown. Stir in the chopped garlic and then remove the skillet from heat.
  3. Assemble pizza: Evenly spread the caramelized onion and mushroom mixture over the partially baked dough. Layer the baby spinach leaves on top, followed by the shredded mozzarella and Parmesan cheeses.
