Instructions
- Warm the Pineapple Juice: Heat the pineapple juice in the microwave until it is warm to the touch, which helps with rehydrating the raisins.
- Rehydrate the Raisins: Place the raisins in a small bowl and pour the warmed pineapple juice over them. Let them soak for 10-15 minutes until they plump up, then drain the excess juice.
- Combine Salad Ingredients: In a large bowl, mix together the matchstick carrots, plumped raisins, mayonnaise, drained pineapple tidbits, and sugar. Stir thoroughly to evenly combine all ingredients.
