Ingredients
Scale
Potatoes
- 2 pounds baby potatoes, halved
Seasoning and Coating
- 3 tablespoons olive oil (or melted butter)
- 3 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
Cheese and Garnish
- 1 cup Parmesan cheese, finely grated
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking and help with easy cleanup.
- Prepare Seasoning Mixture: In a large bowl, combine olive oil, minced garlic, salt, black pepper, onion powder, and smoked paprika. Mix well to evenly distribute all the flavors.
- Coat Potatoes: Toss the halved baby potatoes in the seasoning mixture until they are thoroughly coated with the garlic and spice blend.
- Layer Parmesan and Potatoes: Spread the grated Parmesan cheese evenly on the prepared baking sheet. Arrange the coated potatoes cut-side down on top of the Parmesan layer for a crispy crust as they bake.
- Bake Potatoes: Place the baking sheet in the preheated oven and bake for 25–30 minutes until the potatoes are fork-tender and the bottoms are golden brown. For extra crispiness, switch the oven to broil and cook for an additional 2–3 minutes, watching carefully to avoid burning.
- Garnish and Serve: Remove from the oven, sprinkle fresh parsley over the potatoes, and serve warm as a delicious savory side dish.
Notes
- You can substitute olive oil with melted butter for a richer flavor.
- Broiling at the end intensifies the crispiness, but keep an eye on the potatoes to prevent burning.
- Feel free to add other herbs like thyme or rosemary for extra aroma.
- Baby potatoes are preferred for their tender texture and quick cooking time but small regular potatoes can be used with slightly longer bake time.
- Make sure to arrange potatoes cut-side down to get the best crust on the Parmesan layer.
