Blueberry Filling

- 2 cups white flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 cups buttermilk
Instructions
- Prep: Preheat your oven to 350°F (175°C). Place the butter in a deep-dish 7×11 baking dish or a 9×13 pan if you don’t have a deep dish. Put it in the oven just until the butter melts completely—remove promptly to avoid any splattering or burning.
- Prepare berries: In a saucepan, combine the blueberries, 1/2 cup sugar, cornstarch, water (only if using fresh berries), and lemon juice. Bring the mixture to a boil, allowing it to thicken. Taste and adjust sugar if needed, then remove from heat and set aside.
- Prepare topping: In a medium bowl, mix the flour, 1 cup sugar, baking soda, salt, and ground cinnamon. Add the buttermilk and whisk until you get a smooth batter without lumps.
- Bake: Pour the blueberry filling over the melted butter in the baking dish. Slowly pour the prepared topping evenly over the blueberries. Do not stir. Bake for 40 to 45 minutes, or until the topping is puffed and golden brown around the edges.
