Description

A quick and flavorful Garlic Herb Chicken with Cherry Tomatoes and Broccoli, cooked in a skillet with aromatic herbs, garlic, and a touch of lemon for brightness. Perfect for a healthy and delicious weeknight dinner ready in just 25 minutes.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts, sliced into strips
  • Salt and pepper, to taste
  • 1 tsp dried Italian herbs (basil, oregano, thyme), divided

Sauce and Vegetables

  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • 1 cup cherry tomatoes
  • 2 cups broccoli florets
  • 1 tbsp lemon juice

Instructions

  1. Season the Chicken: Season the chicken strips with salt, pepper, and half of the dried Italian herbs evenly to infuse flavor before cooking.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken strips and sear them until they are golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic and Herbs: In the same skillet, melt the butter and add the minced garlic along with the remaining dried Italian herbs. Sauté for about one minute until fragrant but not browned.
  4. Cook Vegetables: Add the cherry tomatoes and broccoli florets to the skillet. Cook, stirring occasionally, until the tomatoes begin to blister and the broccoli becomes tender-crisp, about 4-5 minutes.
  5. Combine Ingredients: Return the cooked chicken strips to the skillet. Add lemon juice and chopped fresh parsley. Toss everything together to coat the chicken and vegetables evenly with the flavorful sauce.
  6. Warm and Serve: Allow the entire mixture to warm through for one minute and then serve hot for a fresh, herbaceous meal.

Notes

  • Use fresh parsley instead of dried for a brighter flavor.
  • To make it spicier, add red pepper flakes with the garlic.
  • You can substitute chicken breasts with thighs for more juiciness.
  • Serve over rice, quinoa, or pasta to make it a complete meal.
  • Ensure broccoli florets are cut evenly for uniform cooking.
