Instructions
- Brown the Ground Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Once browned, remove the beef from the skillet and set aside.
- Sauté Aromatics and Peppers: In the same skillet, add the remaining olive oil. Add the chopped onion, red bell pepper, and minced garlic. Sauté until the onion is translucent and the peppers have softened, about 5 minutes.
- Cook Zucchini: Add the sliced zucchinis to the skillet and cook for another 5 minutes, stirring occasionally, until they start to become tender.
- Combine Ingredients: Return the cooked ground beef to the skillet with the vegetables. Stir in the undrained diced tomatoes, oregano, salt, and black pepper.
