Instructions
- Boil and Peel Eggs: Place the eggs in cold water and bring to a boil. Once boiling, cover the pot, remove it from heat, and let the eggs sit for 10–12 minutes. After cooking, transfer the eggs to an ice bath to cool and make peeling easier, then peel the shells off.
- Separate and Mash Yolks: Slice the peeled eggs in half and carefully separate the yolks into a bowl. Mash the yolks until they become smooth and crumb-free.
- Mix the Base: Add mayonnaise, Dijon mustard, and white vinegar or pickle juice to the mashed yolks. Stir everything together until the mixture is creamy and uniform.
- Incorporate Egg Whites: Finely chop the egg whites and gently fold them into the creamy yolk mixture, combining evenly without over-mixing.
- Season the Dip: Add salt, black pepper, and cayenne pepper or hot sauce if desired. Taste and adjust seasoning to your preference.
- Garnish and Chill: Spoon the dip into a serving bowl, sprinkle paprika and freshly chopped chives over the top. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
