Ingredients
Scale
Shrimp Marinade
- 1 lb Large Shrimp (peeled and deveined)
- 2 tbsp Olive Oil
- 2 tbsp Lime Juice (freshly squeezed)
- 1 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Ground Cumin
- Salt, to taste
- Black Pepper, to taste
Corn Salsa
- 2 ears Corn (fresh, grilled)
- 1/4 cup Red Onion (diced)
- 1/4 cup Fresh Cilantro (chopped)
- 2 tbsp Lime Juice (freshly squeezed)
- Salt, to taste
- Black Pepper, to taste
Creamy Sauce
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 1 tbsp Lime Juice (freshly squeezed)
- 1/2 tsp Garlic Powder
- Pinch of Salt
Toppings
- 1 medium Avocado (diced)
Instructions
- Prepare the Shrimp Marinade: In a medium bowl, combine the peeled and deveined shrimp with olive oil, lime juice, chili powder, garlic powder, ground cumin, salt, and black pepper. Toss well to coat all shrimp evenly. Cover and let marinate at room temperature for 15–20 minutes to infuse flavors.
- Grill the Corn: Preheat your grill to medium-high heat, about 400°F (200°C). Place the corn ears directly on the grill grates, turning occasionally until lightly charred and tender, approximately 10–12 minutes. Remove from grill and let cool slightly.
- Make the Corn Salsa: Once cool enough to handle, cut the kernels off the cob into a bowl. Add diced red onion, chopped cilantro, lime juice, salt, and black pepper. Mix thoroughly to combine all ingredients.
- Prepare the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, and a pinch of salt until smooth and creamy. Adjust seasoning if needed.
- Grill the Shrimp: Oil the grill grates lightly and return the grill to medium-high heat. Grill the marinated shrimp for 2–3 minutes per side, or until they turn opaque with a slight char, ensuring they remain juicy and flavorful.
- Assemble the Shrimp Bowl: Start by spooning a generous amount of corn salsa at the bottom of each serving bowl. Layer grilled shrimp on top, followed by diced avocado for creaminess. Drizzle the prepared creamy sauce over the assembled bowl to finish.
Notes
- Ensure shrimp are not overcooked to maintain juiciness; they cook quickly on the grill.
- Fresh corn is preferred for best flavor, but frozen corn can be substituted if needed.
- Adjust seasoning and lime juice in salsa and sauce to your taste preference.
- For spicier bowls, add a pinch of cayenne pepper to the shrimp marinade or salsa.
- To keep avocado from browning, drizzle with a little extra lime juice before assembling.
