Instructions

- Add vegetables: Scatter the sliced red onion (or shallot), crushed garlic cloves, halved cherry tomatoes, and sliced black olives evenly around the cod in the baking dish.
- Season: Drizzle the olive oil over the fish and vegetables. Sprinkle the Italian seasoning over everything, then season with salt and freshly ground black pepper to taste.
