Description

This Mediterranean Baked Salmon recipe features a flavorful tomato paste and herb topping baked to perfection alongside vibrant roasted red peppers, zucchini, and cherry tomatoes. It’s a simple, healthy, and colorful dish that’s perfect for a quick weeknight dinner or a special occasion.

Ingredients

Scale

Salmon and Topping

  • ¼ cup tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 tablespoon Italian seasoning
  • 1 teaspoon ground paprika
  • ½ teaspoon salt
  • Ground black pepper to taste
  • 1 ½ pounds salmon fillet (skin on)

Vegetables

  • 2 large red peppers (or 6-8 mini red peppers), sliced
  • 1-2 large zucchini, sliced
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ pound cherry tomatoes

Instructions

  1. Preheat the Oven: Heat your oven to 400°F (200°C) and line a sheet pan with baking parchment to prevent sticking and ease clean-up.
  2. Prepare the Topping: In a small bowl, combine tomato paste, 2 tablespoons olive oil, mustard, Italian seasoning, paprika, salt, and black pepper. Mix well until smooth and well incorporated.
  3. Assemble the Salmon: Place the salmon fillet skin-side down in the center of the prepared sheet pan. Spread the prepared topping evenly over the surface of the salmon.
  4. Prepare the Vegetables: In a large bowl, toss the sliced red peppers and zucchini with 1 tablespoon Italian seasoning, 1 tablespoon olive oil, salt, and pepper until well coated.
  5. Add Vegetables to Pan: Arrange the seasoned peppers and zucchini around the salmon fillet on the sheet pan. Scatter the cherry tomatoes on top of the vegetables.
  6. Bake: Place the sheet pan in the oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Notes

  • For even cooking, cut vegetables to similar thicknesses.
  • Using skin-on salmon helps keep the fillet moist during baking.
  • Feel free to swap Italian seasoning with fresh herbs like oregano and basil.
  • Cherry tomatoes add sweetness; grape tomatoes can be used as an alternative.
  • Cooking time may vary slightly depending on the thickness of the salmon fillet.
