Ingredients
Scale
Salmon and Topping
- ¼ cup tomato paste
- 2 tablespoons olive oil
- 1 teaspoon mustard
- 1 tablespoon Italian seasoning
- 1 teaspoon ground paprika
- ½ teaspoon salt
- Ground black pepper to taste
- 1 ½ pounds salmon fillet (skin on)
Vegetables
- 2 large red peppers (or 6-8 mini red peppers), sliced
- 1-2 large zucchini, sliced
- 1 tablespoon Italian seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- ½ pound cherry tomatoes
Instructions
- Preheat the Oven: Heat your oven to 400°F (200°C) and line a sheet pan with baking parchment to prevent sticking and ease clean-up.
- Prepare the Topping: In a small bowl, combine tomato paste, 2 tablespoons olive oil, mustard, Italian seasoning, paprika, salt, and black pepper. Mix well until smooth and well incorporated.
- Assemble the Salmon: Place the salmon fillet skin-side down in the center of the prepared sheet pan. Spread the prepared topping evenly over the surface of the salmon.
- Prepare the Vegetables: In a large bowl, toss the sliced red peppers and zucchini with 1 tablespoon Italian seasoning, 1 tablespoon olive oil, salt, and pepper until well coated.
- Add Vegetables to Pan: Arrange the seasoned peppers and zucchini around the salmon fillet on the sheet pan. Scatter the cherry tomatoes on top of the vegetables.
- Bake: Place the sheet pan in the oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Notes
- For even cooking, cut vegetables to similar thicknesses.
- Using skin-on salmon helps keep the fillet moist during baking.
- Feel free to swap Italian seasoning with fresh herbs like oregano and basil.
- Cherry tomatoes add sweetness; grape tomatoes can be used as an alternative.
- Cooking time may vary slightly depending on the thickness of the salmon fillet.
