Ingredients
Scale
Chicken and Potatoes
- 1.5 pounds boneless skinless chicken breast or thighs, cut into bite-sized pieces
- 1.5 pounds baby red or Yukon gold potatoes, washed and chopped into evenly sized chunks
Seasoning and Toppings
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1.5 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil to prevent sticking and facilitate easy cleanup.
- Prep Ingredients: Wash and dry the baby potatoes, then chop them into evenly sized chunks for uniform roasting. Cut the chicken into bite-sized pieces to ensure even cooking.
- Season Chicken and Potatoes: In a large bowl, combine the chicken pieces and chopped potatoes. Add olive oil, minced garlic, Cajun seasoning, paprika, salt, and pepper. Toss everything together thoroughly to coat all pieces evenly with the seasoning and oil.
- Arrange on Baking Sheet: Spread the seasoned chicken and potato mixture evenly across the prepared baking sheet, making sure not to overcrowd to allow even roasting and crisping.
- Roast: Place the baking sheet in the preheated oven and roast for 25–30 minutes. Flip the chicken and potatoes halfway through cooking to ensure even browning. Cook until the potatoes are golden and tender, and the chicken reaches an internal temperature of 165°F (74°C).
- Add Parmesan and Parsley: Once out of the oven, immediately sprinkle the hot chicken and potatoes with grated parmesan cheese and chopped fresh parsley for added flavor and a fresh touch. Serve warm.
Notes
- For crispier potatoes, soak chopped potatoes in cold water for 30 minutes before drying and seasoning to remove excess starch.
- You can substitute Cajun seasoning with a mix of paprika, cayenne pepper, garlic powder, onion powder, thyme, and oregano if unavailable.
- Use chicken thighs for juicier meat; chicken breasts will cook faster and leaner.
- To make the dish gluten-free, ensure the Cajun seasoning used does not contain any gluten additives.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
