- 2 large Russet potatoes, sliced

Sauce
- 1/3 cup paleo mayo (homemade or purchased)
- 1 tablespoon dijon mustard

- 1 lb ground beef (80% lean grass-fed beef)
- 1/2 teaspoon sea salt (or to taste)

- 4 cups greens of choice
- 1 cup cherry tomatoes (halved or sliced)
- 1 medium purple onion (thinly sliced)
- Sliced dill pickles (no sugar added for Whole30)
- 1 large avocado or two small ones, sliced
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper to prepare for baking fries and bacon.
- Prepare and Roast Fries: Slice the Russet potatoes, then toss them in avocado oil, sea salt, black pepper, garlic powder, and optional nutritional yeast. Spread the potato slices evenly on one baking sheet and roast in the oven for about 30 minutes or until crisp and golden.
- Bake the Bacon: Lay the bacon slices out on the second prepared baking sheet and bake in the oven for 16-20 minutes until crispy. Remove from oven and set aside.
- Cook the Ground Beef: Heat a skillet over medium-high heat. Add the ground beef seasoned with sea salt, black pepper, and garlic powder. Cook until the beef is browned and cooked through, breaking it up as it cooks.
- Assemble the Bowls: In serving bowls, layer the greens of your choice, cooked ground beef, crispy bacon, roasted fries, cherry tomatoes, sliced purple onion, sliced dill pickles, and avocado slices.
- Make and Add Sauce: Mix the paleo mayo, dijon mustard, ketchup, dill pickle relish, garlic powder, and onion powder in a small bowl to create the sauce. Drizzle over the assembled bowls to finish.

- To save time, you can prepare the paleo mayo sauce ahead of time and refrigerate it.
