Description

This Pineapple Glazed Salmon recipe features tender, pan-seared salmon fillets coated in a sweet and tangy pineapple glaze made from fresh pineapple, soy sauce, honey, and ginger. This easy-to-make dish combines vibrant tropical flavors with a perfectly cooked salmon, garnished with green onions and sesame seeds for a delightful finish.

Ingredients

Scale

For the Salmon

  • 4 salmon fillets (about 6 ounces each)
  • Salt and pepper to taste
  • Oil for cooking (such as vegetable or canola oil), about 1 tablespoon

For the Pineapple Glaze

  • 1 cup fresh pineapple chunks
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

For Garnish

  • 2 green onions, sliced
  • Sesame seeds

Instructions

  1. Prepare the Pineapple Glaze: In a blender or food processor, combine the fresh pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Blend until the mixture is smooth and well combined to form the pineapple glaze.
  2. Simmer the Glaze: Pour the blended pineapple glaze into a saucepan and bring it to a gentle simmer over medium heat, allowing the flavors to meld.
  3. Thicken the Glaze: In a small bowl, mix the cornstarch and water until smooth. Gradually add this mixture to the simmering glaze, stirring constantly. Cook for 2-3 minutes until the glaze thickens to a syrupy consistency, then remove from heat.
  4. Season the Salmon: Pat the salmon fillets dry and season both sides with salt and pepper to taste.
  5. Heat the Skillet: Heat a large skillet over medium-high heat and add enough oil to coat the bottom of the pan.
  6. Cook the Salmon – Side 1: Place the salmon fillets skin-side down in the hot skillet. Cook for 4-5 minutes without moving, allowing the skin to crisp up.
  7. Flip the Salmon and Glaze: Carefully flip the salmon fillets over. Brush half of the pineapple glaze over the cooked side and continue cooking for an additional 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Finish and Serve: Remove the salmon from the skillet, place on serving plates, and drizzle the remaining glazed over the tops. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Ensure the skillet is hot before adding the salmon to achieve a crispy skin.
  • Use fresh pineapple for the best flavor in the glaze; canned pineapple might add unwanted sweetness or water content.
  • You can substitute honey with maple syrup or agave nectar for a different sweetness profile.
  • Adjust the thickness of the glaze by adding more or less cornstarch slurry as needed.
  • This recipe pairs well with steamed rice or roasted vegetables for a complete meal.
