Shrimp Scampi
- 1 lb large shrimp (peeled and deveined)
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 4 garlic cloves (minced)
- 1/4 cup dry white apple vinegar or chicken broth
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Garlic Bread
- 4 slices French or Italian bread
- Butter for spreading on bread (approximately 2 tbsp)
- 1 garlic clove minced or garlic powder for garlic butter (optional)
Instructions
- Prepare Garlic Bread: Preheat your oven to 375°F (190°C). Spread butter mixed with minced garlic or garlic powder on each slice of French or Italian bread. Arrange the slices on a baking sheet and bake for 8-10 minutes until the bread is golden and crispy.
- Sauté Garlic: In a large skillet over medium heat, heat 2 tbsp olive oil and 4 tbsp unsalted butter until melted. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Cook Shrimp: Season the peeled and deveined shrimp with salt and pepper. Add them in a single layer to the skillet. Cook for 2-3 minutes on one side, then flip and cook another 2-3 minutes until shrimp turn pink and opaque.
- Add Flavorful Liquids: Stir in 1/4 cup dry white apple vinegar or chicken broth, 2 tbsp freshly squeezed lemon juice, and additional butter into the skillet. Let the mixture simmer for 1-2 minutes to let the flavors meld and the sauce slightly thicken.
