Ingredients

Scale

Shrimp Scampi

  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1/4 cup dry white apple vinegar or chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Garlic Bread

  • 4 slices French or Italian bread
  • Butter for spreading on bread (approximately 2 tbsp)
  • 1 garlic clove minced or garlic powder for garlic butter (optional)

Instructions

  1. Prepare Garlic Bread: Preheat your oven to 375°F (190°C). Spread butter mixed with minced garlic or garlic powder on each slice of French or Italian bread. Arrange the slices on a baking sheet and bake for 8-10 minutes until the bread is golden and crispy.
  2. Sauté Garlic: In a large skillet over medium heat, heat 2 tbsp olive oil and 4 tbsp unsalted butter until melted. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Cook Shrimp: Season the peeled and deveined shrimp with salt and pepper. Add them in a single layer to the skillet. Cook for 2-3 minutes on one side, then flip and cook another 2-3 minutes until shrimp turn pink and opaque.
  4. Add Flavorful Liquids: Stir in 1/4 cup dry white apple vinegar or chicken broth, 2 tbsp freshly squeezed lemon juice, and additional butter into the skillet. Let the mixture simmer for 1-2 minutes to let the flavors meld and the sauce slightly thicken.
  5. Toss and Serve: Return the cooked shrimp to the sauce, tossing gently to coat them well. Serve the shrimp scampi in bowls alongside the warm garlic bread.

Notes

  • You can substitute white apple vinegar with dry white wine for a more classic flavor.
  • Use gluten-free bread for a gluten-free version.
  • Adjust the amount of garlic according to your taste preferences.
  • For extra richness, add a pinch of red pepper flakes or chopped fresh parsley before serving.
  • Serve with a side of pasta, rice, or a fresh salad for a fuller meal.
