Ingredients
Scale
Cookie Base
- 17.5 ounces chocolate chip cookie mix
- ½ cup salted butter, softened
- 1 large egg
Oreo Layer
- 24 Oreos, whole
Cheesecake Layer
- 16 ounces cream cheese, softened
- 1 â…“ cups powdered sugar
- 1 tablespoon cornstarch
- â…” cup sour cream
- 2 large eggs
- 1 â…“ cups rough chopped Oreos
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper or greasing it with cooking spray to prevent sticking.
- Prepare Cookie Base: In a mixing bowl, combine the chocolate chip cookie mix, softened butter, and one egg. Beat the mixture until the dough is well combined. Press the cookie dough evenly into the bottom of the prepared baking pan to form a firm base layer.
- Layer Whole Oreos: Arrange the 24 whole Oreos evenly over the cookie dough layer, covering the surface completely.
- Make Cheesecake Mixture: In a separate bowl, beat the softened cream cheese with powdered sugar and cornstarch until the mixture is light and fluffy. Add the sour cream and mix well. Incorporate the eggs one at a time, blending thoroughly after each addition. Fold in the chopped Oreos gently to distribute them throughout the cheesecake batter.
- Assemble Cheesecake Layer: Spread the cheesecake mixture evenly over the layer of whole Oreos in the pan. Sprinkle the remaining chopped Oreos on top as a crunchy garnish.
- Bake the Bars: Place the baking pan into the preheated oven and bake for 35 to 40 minutes, until the cheesecake layer is set but still slightly jiggly in the center, indicating a perfect creamy texture.
- Cool and Chill: Remove the bars from the oven and allow them to cool to room temperature. Then refrigerate for at least 3 hours to let the cheesecake layer fully set before slicing into 12 squares and serving.
Notes
- For best results, use softened butter and cream cheese to ensure smooth mixing.
- Allow the bars to chill thoroughly to help them slice cleanly and maintain structure.
- You can use any brand of chocolate chip cookie mix and Oreos you prefer, but original Oreos provide the classic flavor.
- These bars can be stored in the refrigerator for up to 5 days in an airtight container.
- For a firmer cheesecake texture, add an extra 5 minutes to the baking time but avoid overbaking to keep creaminess.
