Ingredients
Scale
Praline Mixture
- 1 cup light brown sugar (packed)
- 1/3 cup whipping cream
- 1/4 cup unsalted butter (1/2 of a stick)
- Pinch salt
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
- Prepare the Baking Sheet: Line a large baking sheet with parchment paper and set it aside to cool and set the pralines later.
- Combine Ingredients: In a medium saucepan, add the brown sugar, butter, salt, and whipping cream. Bring the mixture to a boil over medium heat while stirring frequently to dissolve the sugar and blend the ingredients.
- Boil Mixture: Once the mixture reaches a full rolling boil that continues bubbling when stirred, start a timer and let it boil for exactly one minute without stirring.
- Remove from Heat and Add Powdered Sugar: After one minute, remove the saucepan from the heat. Quickly whisk in the powdered sugar until the mixture is smooth and well combined.
- Add Vanilla and Pecans: Stir in the vanilla extract and pecan halves until they are fully incorporated into the praline mixture.
- Cool Slightly: Allow the mixture to cool for about one minute. It should thicken slightly but still be easy to scoop.
- Form Pralines: Use a cookie scoop or tablespoon to drop spoonfuls of the praline mixture onto the prepared parchment-lined baking sheet.
- Set and Serve: Let the pralines cool completely at room temperature until they firm up. Serve once set or store in an airtight container.
Notes
- Use fresh pecans for the best flavor and texture.
- Do not stir the mixture during the one-minute boil to allow proper caramelization and texture.
- Work quickly after adding powdered sugar to prevent the mixture from hardening prematurely.
- If pralines remain sticky after cooling, allow extra time to set or chill briefly in the refrigerator.
