Description

Delicious and nutritious Strawberry Peanut Butter Overnight Oats combine creamy Greek yogurt, natural peanut butter, fresh strawberries, and wholesome oats soaked overnight to create a convenient, protein-packed breakfast that’s ready to enjoy straight from the fridge.

Ingredients

Scale

Base Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 cup milk of choice
  • 2 tablespoons natural peanut butter
  • 2 teaspoons maple syrup or honey
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Fruit

  • 6-8 chopped strawberries plus extra for topping

Instructions

  1. Mix Ingredients: Stir all ingredients together very well in a bowl or jar until the peanut butter, yogurt, milk, oats, chia seeds, maple syrup or honey, vanilla extract, sea salt, and chopped strawberries are fully combined.
  2. Divide Mixture: Divide the oat mixture evenly between two serving jars or containers, then cover them tightly with lids or plastic wrap.
  3. Refrigerate Overnight: Place the covered jars in the refrigerator and allow the oats to soak overnight, or for at least 6-8 hours, so the oats absorb the liquid and soften.
  4. Serve Chilled: In the morning, take the jars out of the fridge and top with extra fresh strawberries before serving cold. Enjoy immediately.

Notes

  • Use milk of choice such as cow’s milk, almond, soy, or oat milk depending on dietary preferences.
  • For a vegan version, substitute Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
  • Chia seeds help thicken the oats and add extra fiber and omega-3 fatty acids.
  • Adjust sweetness to taste by adding more or less maple syrup or honey.
  • Overnight oats can be stored in the refrigerator for up to 3 days.
