Base Ingredients
- 1/2 cup plain Greek yogurt
- 1 cup milk of choice
- 2 tablespoons natural peanut butter
- 2 teaspoons maple syrup or honey
- 1 cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Pinch of sea salt
Fruit
- 6-8 chopped strawberries plus extra for topping
Instructions
- Mix Ingredients: Stir all ingredients together very well in a bowl or jar until the peanut butter, yogurt, milk, oats, chia seeds, maple syrup or honey, vanilla extract, sea salt, and chopped strawberries are fully combined.
- Divide Mixture: Divide the oat mixture evenly between two serving jars or containers, then cover them tightly with lids or plastic wrap.
- Refrigerate Overnight: Place the covered jars in the refrigerator and allow the oats to soak overnight, or for at least 6-8 hours, so the oats absorb the liquid and soften.
- Serve Chilled: In the morning, take the jars out of the fridge and top with extra fresh strawberries before serving cold. Enjoy immediately.
Notes
- Use milk of choice such as cow’s milk, almond, soy, or oat milk depending on dietary preferences.
- For a vegan version, substitute Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
- Chia seeds help thicken the oats and add extra fiber and omega-3 fatty acids.
- Adjust sweetness to taste by adding more or less maple syrup or honey.
- Overnight oats can be stored in the refrigerator for up to 3 days.
