Watermelon Juice

  • 6 cups cubed seedless watermelon
  • ½ teaspoon kosher salt (optional)

Margarita

  • 3 ounces fresh watermelon juice
  • ¾ ounce lime juice
  • 2 ounces silver tequila
  • 1 ounce orange liqueur (such as Triple Sec or Cointreau)
  • ½ ounce simple syrup (optional, depending on sweetness of watermelon)
  • Kosher salt for rimming the glass
  • Lime wedge for rimming the glass
  • Ice


Instructions

  1. Prepare Watermelon Juice: Place the cubed seedless watermelon in a blender and process until completely smooth. Strain the puree through a fine mesh sieve into a bowl or container, pressing the pulp with a spatula or spoon to extract as much juice as possible. Discard pulp. Stir in ½ teaspoon kosher salt if desired. Keep refrigerated if not using immediately. This yields about 3 cups of fresh watermelon juice.
  2. Rim the Glass: Pour some kosher salt onto a shallow plate. Run a lime wedge around the rim of your margarita glass to moisten it. Dip the rim of the glass into the salt, rotating the glass to evenly coat the entire rim with salt. Set aside.
  3. Mix the Margarita: Fill a cocktail shaker with ice along with the fresh watermelon juice, lime juice, silver tequila, orange liqueur, and simple syrup if using. Cover and shake vigorously for at least 20 seconds until well chilled and mixed.
  4. Serve: Fill the prepared glass with ice if desired, then strain the margarita mixture from the shaker into the glass. Garnish as preferred and enjoy immediately.
